To edit a page use the "edit" button, you are provided with a visual editor. Don't try too be fancy, a wiki is about content. Structure your pages, try to do coherent set of edits.

To add a page a good way is to simply create a link to your new page on a page, save the page, and then clicking on the link will propose you to create the page.
