All algorithms give very bad results. Playing with the steppers can not improve the fit.

Here are the results with exact CIQUAL 2020 values:
CIQUAL entries used
| Ingredient | Code | Entry |
|---|---|---|
| amande | 15041 | Almond, peeled/blanched (no unsalted-grilled entry exists) |
| noisette | 15004 | Hazelnut, raw (label says "émondées", not "grillées") |
| cajou | 15054 | Cashew nut, grilled, unsalted |
| pécan | 15026 | Pecan nut, raw |
Recipe â S = 102.6g raw per 100g product (yield 97.4%, consistent with moisture loss from roasting)

What the carbs error tells you
Fat, protein, and sat_fat fit very well, which validates both the fractions and the CIQUAL proxies for those nutrients. The carbs overshoot is structural: even with cashews removed, almonds + hazelnuts + pecans alone contribute ~6g carbs in CIQUAL, leaving virtually nothing for cashews â yet CIQUAL gives cashews 21.3g/100g. The fibre is similarly over. This is a CIQUAL proxy quality issue: the average CIQUAL values for carbs and fibre are systematically higher than what the producer's own nutritional analysis found for these specific nuts. It doesn't call the recipe fractions into question.
The salt difference (0.025 fitted vs 0.01 label) is a trace/rounding artefact â nuts contain naturally-occurring sodium that CIQUAL registers but labels round to †0.01g.
Conclusion
The only conclusion is that the nutritional profile of the ingredients used in this product is very dissimilar from the Ciqual values.
